Broccoli Soup


  • 1 head broccoli, stemmed and cut into florets (reserve stems)
  • 1 large potato, scrubbed and cubed
  • 1 medium onion, peeled and roughly chopped
  • 1 tsp chili flakes
  • 1 tsp sweet paprika
  • 1/2 tbsp olive oil
  • Boiling water
  • Salt and ground pepper to season

How to make Broccoli Soup

  1. Heat the oil in a deep saucepan or cooking pot over medium heat.
  2. Add the onion and stir-cook until soft and fragrant.
  3. Add the potatoes and stir.
  4. Add the broccoli stems, seasoning, chili and paprika; stir the mixture and turn the heat up.
  5. Add boiling water to cover the ingredients.
  6. Bring to a boil, then turn down the heat to low, cover, and simmer for 15 minutes or until the broccoli turns soft.
  7. Add the broccoli florets and some more water to cover the mixture.
  8. Cover and simmer for 10–15 minutes or until the florets turn soft.
  9. Transfer to a blender or food processor and blend to make a smooth mixture.
  10. Serve with crusty bread wedges.
