- 1 kg daikon radishes, peeled and coarsely grated
- 2 carrots, peeled and grated fine (3/4 cup)
- 4 garlic cloves, minced
- 3 tbsp extra-virgin olive oil
- 1/4 cup white wine vinegar
- 2 tablespoons coarsely chopped fresh Italian parsley leaves
- Salt and freshly ground black pepper
How to make Daikon Radish Salad
- Place all the ingredients in a bowl, and season with salt and pepper.
- Mix well, cover the bowl, and refrigerate for at least 15 minutes.
- Serve chilled or at room temperature.
