Daikon Radish Salad



  • 1 kg daikon radishes, peeled and coarsely grated
  • 2 carrots, peeled and grated fine (3/4 cup)
  • 4 garlic cloves, minced
  • 3 tbsp extra-virgin olive oil
  • 1/4 cup white wine vinegar
  • 2 tablespoons coarsely chopped fresh Italian parsley leaves
  • Salt and freshly ground black pepper

How to make Daikon Radish Salad

  1. Place all the ingredients in a bowl, and season with salt and pepper.
  2. Mix well, cover the bowl, and refrigerate for at least 15 minutes.
  3. Serve chilled or at room temperature.
  4. ENJOY!
