Celeriac Salad



  • 1 large celeriac (~700 gr)
  • 1 lemon, cut in half
  • 1/2 cup grated carrots
  • 1/4 cup coarsely chopped fresh Italian parsley leaves
  • 2 tsp ground cumin
  • 1/4 cup mayonnaise
  • 2 tbsp lemon juice
  • Salt and freshly ground black pepper
  • Mixed salad greens

How to make Celeriac Salad

  1. Peel the celeriac and cut off the ends.
  2. Cut the celeriac in half.
  3. Scrape out the soft pulp in the middle and discard it.
  4. Rub the celeriac all over with the cut lemon.
  5. Cut it into julienne strips and place them in a bowl.
  6. Add the carrots, parsley, cumin, mayonnaise, and lemon juice.
  7. Season with salt and pepper and toss well.
  8. Cover the bowl and refrigerate for at least 30 minutes.
  9. Garnish with tomatoes and serve chilled on a bed of leafy salad greens.
  10. Optionally you can add a pinch of dill and olive oil before serving.
