Turkish Pide with Pepperoni/Sujuk


  • For the Pide Dough
    • 2/3 pound / 300 gr flour
    • 2/3 cup / 150 ml water or milk
    • 2 tsp dried yeast
    • 1 tsp sugar
    • 1 tsp salt
    • 2 1/2 tbsp olive oil
  • For the Filling
    • 25 slices pepperoni/sujuk (or spicy salami sausage)
    • 1/6 pound / 80 grams grated mozzarella cheese
    • 1 tomato, peeled, sliced
    • 1 long green pepper sliced and de-seeded

How to make Turkish Pide with Pepperoni/Sujuk

  1. Firstly, start with dough.
  2. Mix flour, yeast, salt, sugar, olive oil and water until well combined. It will be quite wet at the end.
  3. Cover it and let it rise for an hour.
  4. Prepare the filling while waiting for the dough to rise and apart from the pepper, mix the ingredients together.
  5. Spread the filling on top of the pide.
  6. Then add the slices of green pepper for a decorative and tasty finish.
  7. Crimp the edges up 1/2-1 inch / 1-2 cm, so your pide has a shape rather like a large stuffed eggplant, or a flattened boat.
  8. Brush the sides and edges with olive oil, then bake for about 15 minutes at 480 F / 250 C degrees.
