Potato Salad


  • Salad
    • 2 pounds potatoes, peeled and cubed
    • 1 red pepper, deseeded and finely chopped
    • 1 bunch spring onions, trimmed and sliced
    • ½ bunch parsley, finely chopped
    • ½ bunch dill, finely chopped
    • Salt and pepper to taste
  • Dressing
    • 2 tbsp olive oil
    • 2 tsp hot chili flakes
    • Juice of 1 lemon
    • 2 tsp sumac (optional)

How to make Broccoli Soup

  1. Boil water in a deep saucepan or cooking pot; add the potatoes.
  2. Boil for 15 minutes until softened. Drain and set aside.
  3. Potatoes keep on cooking after you take them out of the pot, so do not over-boil or they will break.
  4. Combine the potatoes, parsley, dill, peppers, and onion in a mixing bowl.
  5. Add the sumac and chili flakes; combine well.
  6. Add the oil and lemon juice and toss well.
  7. Serve fresh with optional meat or fish meze dish.
