Chickpeas with Pepperoni/Sujuk

Ingredients

  • 1 pound chickpeas, boiled
  • 1 medium onion
  • 3 tbsp butter
  • 2 medium tomatoes
  • 2 green peppers
  • 2 tbsp tomato paste
  • ½ tsp black pepper
  • ½ tsp red pepper flakes
  • 1 tsp salt
  • 2 cups water
  • 20 slices pepperoni/sujuk/sausage

How to make Chickpeas with Pepperoni/Sujuk

  1. Dice the onion, tomatoes, and peppers.
  2. Fry the onion by using one tablespoon of butter in a medium saucepan.
  3. Add the green peppers, tomatoes, and tomato paste into the frying onion.
  4. After frying the vegetables for about 5 minutes, add the chickpeas, spices, and water; bring to a boil.
  5. Cook for 15 minutes at medium heat.
  6. Meanwhile, fry the pepperoni/sujuk or sausages with the remaining butter and add to the vegetable mixture.
  7. Cook for 5 more minutes at low heat.
  8. Serve with dried hot peppers if desired.
